今はまさに、無形文化財というのですか?和食が見直されておりますが、高尚な料理を家庭の主婦が作るのはとても難しい。けど、すき焼きであれば簡単です。江戸の昔、おエライさんだけが食したそうな?日本のすき焼きを海外の方で知る人はあまり多くはありません。だから、ほんどの場合、歓迎会で私が提供するのは「すき焼き」です。

これを選んだ理由はいろいろありますが、その一つに私は「生卵」の美味しさを彼らに味わってもらいたくもあり、あるいは、和牛の素晴らしさもお醤油についても・・なのでした。しかも、これを私自身が好きなこともあり、我が家のたまなるご馳走でもあったのです。

多くの海外からのお客様は、自国で生卵を食べる習慣がありません。それは日本ほど新鮮な卵が手に入らないからだと聞きますが、案の定、6割程度の人たちは、初めて生卵を食べることとなり、そう言えば、小鉢に割入れることすら、恐る恐るでありましたが・・・。

わが国では卵かけご飯ですら、今は外食で食べられる時代です。しかも、今は安全で新鮮な生卵がいっぱい。私も地元鶏卵業者さんから購入の、1個36円の卵・・安くないが素晴らしい黄身に見とれる外国の方々ですが、これを皮切りに日本の家庭料理を楽しんでもらいますね。
